Ingredients:
- 135 grams corn kernels
- 75 grams fresh tomatoes (chopped)
- 15 grams sun-dried tomatoes
- 2 tbsp canola oil
- 1 tbsp red wine vinegar (or cider vinegar)
- 8 slices turkey breast deli meat
- 4 whole whole wheat tortillas or Mediterranean wraps
- 95 grams romaine lettuce (chopped)
Directions:
- Combine corn, tomato, sun-dried tomatoes, oil and vinegar in a medium bowl.
- Divide turkey among tortillas. Top with equal portions of the corn salad and lettuce. Roll up. Serve the wraps cut in half, if desired
