Healthy turkey wrap for diabetics


  • 135 grams corn kernels
  • 75 grams fresh tomatoes (chopped)
  • 15 grams sun-dried tomatoes
  • 2 tbsp canola oil
  • 1 tbsp red wine vinegar (or cider vinegar)
  • 8 slices turkey breast deli meat
  • 4 whole whole wheat tortillas or Mediterranean wraps
  • 95 grams romaine lettuce (chopped)


  • Combine corn, tomato, sun-dried tomatoes, oil and vinegar in a medium bowl.
  • Divide turkey among tortillas. Top with equal portions of the corn salad and lettuce. Roll up. Serve the wraps cut in half, if desired
